The instapot also has a rubber ring that can be removed, how should we kosher that.

The rubber touches the food if you fill the pot to the top. Also the cover itself has what looks to be metal so I assume the cover needs kashering as well.
you wouldn’t fill the food to the top ( aka touching the lid and rubber) but it is basically a pressure cooker and the food does bubble and splatter the top.

That’s a crock pot. Not an instant pot.
The key to kashering is the concept of הבולען כך פולטו. This means that the same way the pot or utensil absorbs flavor, is the same way the flavor will come out. So any pot or machine that is used in a certain way, the simplest solution is to use it in that same way with water to remove the flavor that’s absorbed. We need to do this after 24 hours of not using it and that is classic hagallah.
