Yes. I understand. They take medicines that are not edible and they add some flavor and sweetener to make it chewable. But ultimately the medicine itself is not edible.

Prior to adding the sweetener and flavor it’s an inedible item that would be made into a pill. This pill if you chew it will be horrible. That renders any wheat or other ingredients irrelevant. Then they add the sweetener and the flavor, and that doesn’t change anything from an Halachic perspective.
