How did Jews eat brocolli or cauliflower before the modern period?
I don’t know specifically about broccoli and cauliflower but the idea that some foods were basically impossible to eat due to bug infestation is not a new concept and it been around for thousands of years. At different times and locations it was different products.
Broccoli and cauliflower are edible when pureed so long as you didn’t see bugs and aren’t specifically trying to puree bugs. So that is certainly one way they could have eaten broccoli and cauliflower back in the day.

Actually about 40+ years ago we ate lots of these vegetables without any infestation because back then they used a very strong insecticide that prevented infestation.
That insecticide was eventually outlawed as well as the insects becoming immune to it, and that started our major infestation issues.
