Not sure about the first 2. Distilled vinegar and alcohol.

Thank you for contacting us! For your inquiry about what type of alcohol is used in San-J GF products- Organic and Conventional types, we use a gluten free alcohol derived from sugarcane. This makes the alcohol a food grade alcohol. Our products are certified/blessed Kosher by Orthodox Union Kosher.
Types and their percentage of alcohol are based on the entire bottle, as we do not test the product in between ending the fermentation with pasteurization:
Tamari soy sauce & Organic Shoyu soy sauce: 2% or less
Reduced Sodium & Organic Reduced Sodium Tamari soy sauce: 4% or less
Tamari Lite 50% Less Sodium soy sauce & Organic Tamari Lite 50% Less Sodium soy sauce: 5% or less
