Also, what about canned chickpeas, and other canned legumes and vegetables? I’ve never been clear on this. Assume they are just the veggie and salt and ascorbic acid.

You are correct with canned chick peas and similar.
All the items that you refer to, there is no reason to even post it. A typical can of beans or bag of potato chips have a very simple list of ingredients. If you know the ingredients, and they’re not a problem, no need to get validation.
