Do we say Hamotzei on plain croissants?
What about sweetened croissants?

It’s hard to give a general answer.
There are definitely croissants that are Homotzie. I don’t know if they all are.
The rule is - if the Derech is to eat it as a meal - Hamotzie. The challenge is making that judgement.
I asked a similar question here regarding pumpkin bread or banana bread. I think I was told as long as it is wheat the bracha is hamotzi. But, I’m not sure everyone would agree. It’s a mix and no yeast or kneading is done. It’s poured into a baking pan, unlike solid dough, the texture is similar to cake, and it’s sweet. It could even be mistaken as honey cake. Any feedback would be appreciated.
If no needing is done it may not be hamotzi. Which post are you referring to?
Whether a product has yeast or not has no bearing on the bracha. Maztah doesn’t have yeast either
