The Talmud forbids eating bread that was baked in an oven smeared with grease and dough kneaded with milk due to the concern that the eater would accidentally eat the meat bread with dairy or the dairy bread with meat (bavli Pesahim 30a).
One wonders why we bake pizza or make grilled cheese sandwiches if bread must always be neutral.
Because you see the cheese so you don’t assume it’s parve. The problem is with bread where you won’t know it’s dairy without asking.

Sometimes I am tempted to toast a bun on the barbeque while I am grilling meat. The racks where the bun would be toasted have the flavour of the meat grilled there so perhaps such toasting would be forbidden?
It’s fine. You are eating it during that meal.
