Determining kashrus based on ingredients

I was wondering if you could please clarify why relying on ingredient lists are ok? Sometimes the generic term flavors can be used as explained by the FDA here? https://www.fda.gov/food/food-ingredients-packaging/overview-food-ingredients-additives-colors
