Sorry for harping on this point but it says organic vinegar. Is that okay because we assume that if it were of wine vinegar it would say wine vinegar or is it okay because all vinegar is okay?
The reason why I ask is because there are some countries like Spain where wine vinegar is cheap and I don’t know if they wouldn’t necessarily list it as ‘wine vinegar.’

That’s a good point you’re making. In the US if it just says vinegar without specifying, it’s apple cider vinegar. This may not be the case in Spain. In any event wine is nullified if less than 6:1 ratio.

Do you have a source for that? I always thought plain white vinegar was usually made from corn or grain.
