I thought there was an issue with many soft cheeses not being gevinas yisroel.
Hoping for some clarification on your stance on this topic.
There was a question regarding how kashrus agencies observe the cheese making process. We were able to clarify and now dont have an issue with certified soft cheeses.
This is under KORC from San Francisco. I believe the Rav who is in charge there has a very lenient opinion about cheese, similar to the Tablet K.
I think this might be worth looking into this particular product more.
