Is kosher (OU-D) Belgioioso mozzarella cheese also okay for Pesach?

Do vinegar and acetic acid have potential chametz or kitniös concerns?

Distilled vinegar has potential chametz. Not kitniyot. If not specified, vinegar will be apple cider as per FDA.

I contacted the company. They said the vinegar they use is white distilled vinegar.

That makes me wonder about assuming unspecified vinegar is apple cider vinegar? I tried finding that FDA guideline/assumption but couldn’t…

Did you call or email the company? Email the company and ask them to source of the vinegar whether it’s from apple or a grain…

I read last year that “most” dairy items - as long as they have a hechsher - are kosher for Passover… as long as they don’t have obvious chametz items - for example cookies in yogurt.
So now every dairy item also have to be checked and see if it’s kfp?

Correct. You can’t assume anything. This is true for all products, dairy or otherwise.

I may be missing something, but this regulation does not state - If not specified, vinegar will be apple cider. I do not see that mentioned anywhere.
