on Seder Tubishvat, I had a certain order of fruits for desert at the end of the meal (seuda with bread) I served: grapes, pomegranate, and dates, and after all that, quince. Now i had not had quince yet, so it was a shehecheyanu. How should i have said the berachot, since it is all within a seuda, and i had a
shehecheyanu but it seems that the fruits of Eretz Israel have precedence

Your question is disputed among the poskim. I hope I am representing the opinion of Rabbi Abadi accurately.

In you case we would go with the shiv’at haminim first even though there is another fruit that may be more chaviv.
Dates are closer to the word “eretz” in the pasuk so that goes before grapes.
