San-j tamari lite brewed soy sauce

We would need to know the source of alcohol.

I am confused. The same company , has the same product (not lite) same ingredients with alcohol and on the site it says alcohol is ok since it is just to preserve freshness. For this product it says we need to know the source of the alcohol

According to their website FAQs | Healthy Tamari Sauce - Non-GMO & Gluten-Free | San-J :
We add some alcohol derived from sugarcane to preserve freshness. As a result of fermentation, there may be some additional alcohol that is naturally occurring in our Tamari and Shoyu, estimated at the levels below:

  • Tamari and Shoyu – about 2% alcohol
  • Less Sodium Tamari – about 4% alcohol
  • Tamari Lite 50% Less Sodium – about 5% alcohol

Would you also advise if the “28% Less Sodium” version is OK.
Ingredients: WATER, SOYBEANS, SALT, ALCOHOL (TO PRESERVE FESHNESS).
