Not a Pesach question nor about the additives/glaze. Most frozen fish fillets in supermarkets are skinless. Manufacturers are required by the 2004 amendment (21 CFR U.S.C. 343(w)(2)) to specify the market name of the fish species on the packaging.[1] If it names a kosher fish, does that suffice?
For example: [2]
Great Value Wild Caught Boneless Skinless Alaskan Pollock Fillets, 4.2 lb.

PRODUCT OF UNITED STATES.
Can some show the Rav the Shu”t Chelkat Yaakov 3:10? There he allows tuna from factories based of Uman Lo Mara Umnato. Seems like the sevara would apply to all pre packaged frozen fish.
The Oceana studies seem to be referring to local stores and not factories.
